Equipment

  • Mixing Bowl
  • 9×5-inch loaf pan
  • Grease or cooking spray
  • Oven
  • Small bowl for making glaze
  • Whisk
  • Meat thermometer
  • Knife for slicing

Ingredients

  • 2 pound lean ground beef
  • 1 cup finely crushed Ritz crackers
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped bell peppers
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

For the topping

  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 1 teaspoon yellow mustard

Instructions

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x5-inch loaf pan.
  • Combine the ground beef, crushed Ritz crackers, shredded cheddar cheese, chopped onions, bell peppers, milk, eggs, salt, and black pepper in a large mixing bowl. Mix well until all the ingredients are thoroughly combined.
  • Transfer the meatloaf mixture into the prepared loaf pan and shape it into a loaf shape, ensuring it fills the pan evenly.
  • Whisk together the ketchup, brown sugar, and yellow mustard in a small bowl to make the topping glaze. Spread the glaze evenly over the top of the meatloaf.
  • Place the loaf pan in the preheated oven and bake for approximately 1 hour, or until the internal temperature reaches 160°F (71°C) when tested with a meat thermometer.
  • Once cooked, remove the meatloaf from the oven and let it rest for a few minutes before slicing. This allows the juices to redistribute and ensures a tender result.
  • Serve slices of the Cracker Barrel meatloaf with your favorite sides, and enjoy!
  • Note: Cooking times may vary, so checking the internal temperature for doneness is always best.

Notes

  • Breadcrumbs Variation: If you prefer a lighter texture, substitute the Ritz crackers with plain breadcrumbs for a traditional meatloaf consistency.
  • Cheese Selection: Feel free to experiment with different types of cheese, such as mozzarella or Swiss, to add a unique flavor profile to your meatloaf.
  • Adjusting Seasonings: Don't be afraid to adjust the spices and seasonings according to your taste preferences, adding more or less to suit your desired flavor intensity.
  • Slicing and Serving: For clean and neat slices, allow the meatloaf to cool for a few minutes after baking before slicing it. Serve with your favorite sides, like mashed potatoes or roasted vegetables.
  • Make Ahead: You can prepare the meatloaf mixture a day in advance and refrigerate it until ready to bake, allowing the flavors to develop further.
  • Leftover Ideas: Transform any leftover meatloaf into sandwiches, crumble it into pasta sauces, or use it as a topping for pizzas to enjoy its delicious flavors in new and creative ways.
